Summary
In the latest version of Outlook for Mac, Microsoft has removed the option to permanently change default fonts through the desktop appβs Preferences.
Font settings are now managed through Outlook Web, and once configured there, they sync automatically across all Outlook clients, including the new Outlook for Mac.

Procedure
Change the Default Font via Outlook Web (Recommended)
Go to https://outlook.office.com
β Sign in with your company email address and password.Click the βοΈ Settings (gear icon) in the top-right corner.
Select Mail β Compose and reply from the left-hand menu.

Under Message format, update the following:
Font: Calibri
Size: 11 or 12 pt
Color: Black (or your preferred color)
Scroll down and click Save.
Result
Your new default font settings will sync automatically across:
Outlook for Mac
Outlook on the Web
Outlook for Windows (if applicable)
If you donβt see the change immediately, restart Outlook for Mac or allow a few minutes for synchronization.
Additional Notes
Font settings are stored in your mailbox profile in Microsoft 365.
Any device connected to your account will inherit the same default formatting.
The legacy Outlook desktop preference option has been deprecated.
